Efficiently and safely conduct the cutting and sawing of meat products in the processing room while ensuring accuracy and quality of the product being produced, and assist with other miscellaneous duties in the processing room.
- Communicate with packaging assistant to insure correctness of all orders
- Prepare all USDA and company paperwork for the processing operation
- Assist in training of meat cutters and assistant cutters
- Perform meat cutting duties
- Perform other miscellaneous duties on the processing floor
- Assist in other departments as needed
Skills and Experience Needed for Success:
- Experience keeping a sharp knife

- Be able to stand for 10 hours per day

-Ensure the freshness and quality of meat products by inspecting them for any signs of spoilage or damage.
-Store meats properly in refrigerators or freezers at the required temperature.
-Sharpen knives and maintain equipment such as meat grinder, slicer, cryovac, etc.
-Prepare and cut different types of meat, including beef, pork, poultry, and seafood, according to chef’s specifications.
-Weigh and portion meat or fish according to recipes or chef’s specifications while limiting waste.
-Clean equipment, reach-ins, and cold room to maintain health and sanitation standards.
-Assist with inventory management and rotation of stock to minimize waste, and notify chef when orders need to be adjusted.

- Ensures the meat, seafood, prepared foods, and cheese cases are fully stocked. Rotates meats, poultry, seafood, prepared foods, and cheeses according to expiration dates. Follows established guidelines when disposing of damaged and/or expired products.
- Receives and unpacks meat, poultry, seafood, prepared foods, and cheeses in the meat cooler and freezer.
- Cleans and sanitizes all equipment, display fixtures, and areas in the meat department, including the meat cooler, freezer, and refrigerated display cases.
- Maintains all club policies and procedures.
- Performs other duties as assigned, including working in other departments as needed.
- Regular, predictable, full attendance is an essential function of this job.
Qualifications
- Previous experience working with fresh and processed meats preferred.
- Knowledge of automatic/hand wrapping machines preferred.
- Prior experience working in a meat and/or deli department preferred.
- At least 18 years of age.
Environmental Job Conditions
- Most of the time is spent moving about frequently on hard surfaces. There may be a need to occasionally position oneself to examine or scan merchandise, including bending, handling, pulling, reaching, and/or stooping.
