SBN - Restaurant & Bar Operations ManagerDepartment: RestaurantEmployment Type: Fixed Term ContractLocation: GlobalReporting To: Hotel DirectorDescriptionThe Maitre D' Hotel is responsible for managing and overseeing the entire service department, ensuring the smooth operation of the vessel's dining outlets, bars, and lounges. This includes planning and scheduling for all service staff, Outlet Managers, and utilities to optimize performance and productivity, with the goal of achieving the highest overall results and ratings. The Maitre D' Hotel fosters positive working relationships with all Heads of Departments and is accountable for supervising, training, and evaluating all restaurant and bar operations. Main ResponsibilitiesGuest and Team Member ExperiencePositively contributes to guest statisfaction, by building interpersonal relationships with the guest. Proactively helps to resolve all service and product deficiencies and follows up on guest comments. As a brand advocate, assists guest, providing accurate information.Leads and effectively communicates with Team Members, Managers, and Guests.Operational Effectiveness and Managing ResourcesCreates an atmosphere of success within the Restaurant and Bar department with the primary focus on delivering excellent service and maximizing guest satisfaction. Manage quality control processses within operations. Respond efficiently and accurately to guest complaints and feedback, includes the acknowledgement and appreciation of positive guest feedback.Regularly review service quality and share open and facts with Hotel Director and Corporate supervisors on all service-related topics and action plans for improvement. Administer perfromance review and feedback as per Seabourn standards.Ensure that all service staff and managers are scheduled as per standards. Manager & control operational costs and identify measures to improved financial perfromance.Ensures that all outlets are set up according to company's operational manuals and SOPs. Implement new policies, protocols as directed by Head Office.Ensures that promotions & career development are dealt with in accordance with established procedures. Team Engagement and CommunicationMaintains a good working relationship with your team, all other departments, Managers & Superiors.Speaks up to share ideas or information on important issues.Demonstrates teamwork with the team and all other departments.Safety and ComplianceEnsures compliance to safety protocols of public health as defined by internal processes, external, and governmental regulations. Maintains a safe and healthy work environment by following organization standards and sanitation regulations.Regularly participates in onboard safety trainings & procedures.Always complies with all Fleet Safety regulations, including mustering guests NOTE: In addition to the performance items listed in this Role Description, the team member also performs any other duties as assigned by Senior Management or Head Office. Maitre D' Hotel, is part of the Management team, takes part in all related functions as per cruise layout. Experience:A minimum of Five years' experience as F&B Manager, onboard a five start cruise ship or luxury hosptiality establishment like hotels, high street restaurants or exclusive clubs Knowledge, Skills & Abilities:Managing & operating restaruatant systems e.g., Micros, Silverwhere, MXP, CrunchTime and Symphony.United States Public Health rules and regulationsHACCP Physical Demands & TravelPhysical Demands:For the safety of yourself and others on board certain physical abilities shall be maintained.Must be able to bend, climb, perform repetitive motion, and repetitively heavy lift.Must maintain physical fitness to perform tasks associated with job.WORK CONDITIONS:Working on a cruise ship is very different from any land-based occupation. Working hours are longer and work is more intense due to the constant demand of the guests. You have to be very flexible in your working hours, which on occasion might have to be changed due to unforeseen circumstances. The Maritime Labour Convention of 2006 however strictly regulates these. Apart from the working hours there are strict rules which all members of the ship's company need to adhere to as stipulated by the Master's standing orders.
