Responsibilities- Food assembly, tray delivery, and dishwashing.
- Complete cold food prep as well as assemble food/menu items such as individual nourishments, entrees, meats, starches, vegetables, breads, salads, desserts, beverages, condiments, tray ware, and serving utensils.
- Place specified items on trays as listed on patient diet card and menus according to established portions.
- Deliver meal trays to patient wards and community living center (CLC) dining room on campus.
- Break down, clean and restock tray line after tray service.
- Perform variety of tasks in the dish-room, such as, scraping trays, sorting, stacking, racking tray ware for loading into the dish-machine, and pulling clean tray ware from the dish-machine.
- Empty trash from kitchen areas to the waste receptacle located outside near receiving dock.
- Assist Wage Grade-4 (WG-4) food service worker assigned to the ingredient control room, store food deliveries and supplies in walk-in refrigerators/freezers, and dry storage areas.
- Practice good customer service skills when interacting with patients, especially when delivering and retrieving meal trays from patient areas.

PERFORMANCE RESPONSIBILITIES
Primary Duties
- Prepares and cooks food for school lunch program according to production sheets and recipes, using proper food handling techniques.
- Operates kitchen equipment as necessary to include: ovens, steamers, kettles, grill, dish washer, mechanical choppers, graders, slicers, and mixer.
- Sets up serving line at lunch time; serves lunch and keeps all foods on serving line throughout lunch period.
- Insures that good sanitation techniques are employed at all times in preparation, service, food temperature control, and proper storage of raw and prepared food.
- Cleans and maintains small equipment, washes pots and pans as needed and performs general cleaning as appropriate.
- Insures cost control through conscientious portion control, recipe compliance, accurate weighing and measuring, and proper channeling of leftover foods.
- Maintains daily production records as necessary, noting over or under production and/or any recipe modification.
- Performs any other duties as assigned by immediate supervisor.
- Prolonged periods standing and walking.
- Must be able to lift up to 25 pounds at a time.
Licenses and Certification: Relevant clearances required by law
Problem Solving Skills: Must exhibit high levels of problem solving skills for overall efficiency and productivity.
