Role Overview
We’re looking for a passionate and creative Head Baker to join us at our brand-new Williamsburg commissary and retail bakery. This isn’t just a job — it’s an opportunity to lead SMØR into a new era of growth. You’ll be at the heart of our bakery, refining the recipes, leading an incredible team, and fueling both our retail and wholesale operations.

Responsibilities
- Lead daily production of sourdough breads, laminated pastries, and seasonal Scandinavian-inspired baked goods, ensuring consistency across retail and wholesale operations
- Develop and refine recipes in line with SMØR’s brand and standards
- Train, schedule, and manage bakery staff
- Maintain food safety, sanitation, and compliance standards
- Monitor inventory, ordering, and vendor relationships
- Collaborate with ownership and FOH management on menu development and seasonal launches
- Oversee logistical planning and execution of deliveries to other SMØR locations, ensuring timeliness, accuracy, and quality control
- Ability to work early-morning and overnight shifts (2:00-3:00am starts) to ensure production is completed for same-day service and delivery deadlines
- Ensure efficiency, consistency, and high-quality output in a commissary bakery setting
Qualifications
- 5+ years of professional baking experience, with at least 2 years in a leadership role
- Strong knowledge of fermentation, lamination, and pastry techniques
- Proven ability to manage a team in a fast-paced environment
- Creative mindset with ability to innovate while maintaining consistency
- Excellent organizational and communication skills
- Passion for Scandinavian baking traditions is a plus
