THE ROLE OF JAPANESE PREPARATION CHEF
We are seeking an experienced and highly skilled Japanese Preparation Chef to join our culinary team at a high-end Japanese dining establishment. The ideal candidate will have a strong background in Japanese cuisine, deep knowledge of traditional Japanese ingredients, and a commitment to delivering exceptional quality and precision. This role requires both technical mastery and the ability to contribute within a high-performing kitchen team.
ESSENTIAL DUTIES & RESPONSIBILITIES
- Prepare and present sushi dishes with precision, consistency, and aesthetic excellence
- Handle all aspects of fish preparation, including filleting, portioning, and curing as needed
- Ensure proper rice preparation and seasoning in accordance with traditional methods
- Maintain high standards of hygiene and food safety, especially in handling raw seafood
- Collaborate with senior chefs to support daily mise en place and service execution
- Monitor and manage inventory for sushi ingredients and kitchen tools
- Contribute to menu refinement and seasonal dish development where appropriate
MINIMUM QUALIFICATIONS (EDUCATION, EXPERIENCE, SKILLS)
- Minimum of 2+ years' experience working in a similar role.
- Strong background in fine dining.
- A professional and polished approach to leadership in a busy atmosphere.
- Strong work ethic and customer-focused approach.
- Culinary trained and professional who is passionate and curious to develop and grow as a Sous Chef.
- Stable work experience background.
- Food safety certificate.
- Well-versed in verbal communication skills.
- Passionate, Curious, Sincere, Entrepreneurial, Driven, Empathetic and Highly motivated.
PHYSICAL DEMANDS AND WORK ENVIRONMENT
- Ability to be flexible with job demands and open-minded when being asked to complete tasks.
- Ability to operate and use all equipment necessary to run the restaurant.
- Ability to operate with grace under pressure.
- Ability to move or handle equipment throughout the restaurant generally weighing up to 50 pounds.
- Ability to work varied hours/days as business dictates.
- Ability to stand for up to 8-10 hours a day.

ResponsibilitiesJob Summary:
The Bartender's duties include, but are not limited to mixing and serving alcoholic and non-alcoholic drinks to guests and while maintaining the high standard of cleanliness of each bar area according to established policies. They will ensure a positive guest experience and interact and service guests in a cordial and gracious manner.
Essential Job Functions:
- Prepares all drinks in accordance with established recipes.
- Serves guests and servers according to established policy.
- Responsible for checks issued to him/her and acts as a cashier in front and service bars, except on casino floor.
- Responsible for the receipt of monies and settlement of guest checks in accordance with all appropriate policies.
- Maintains a clean, safe, hazard-free work environment within area of responsibility.
- Ensure a positive guest experience
- Interact and service guests in a cordial and gracious manner while being able to present a professional experience
- Exhibit conduct in accordance with all Gaming Commission Regulations and Seminole Tribe of Florida departmental policies and procedures
- Demonstrate a commitment to ensuring responsible gaming and responsible alcohol service by discretely notifying appropriate management of concerns and observations
Qualifications:
- High school diploma or general education degree (GED) is required as well as certificate in Mixology.
- Minimum of two (2) years in high volume bartending. T.I.P.S. certification and Sanitation certification is preferred.
- Basic mathematical skills specific to job responsibilities are required, to include ability to add, subtract, multiply and divide specific to position responsibilities.
Work Environment:
- May be exposed to casino related environmental factors including, but not limited to, second hand smoke and excessive noise.
- While performing the duties of this job, the employee is frequently required to stand; walk; use hands to finger, handle, or feel; reach with hands and arms, talk or hear; and taste or smell. Join a vibrant, growing restaurant group in the heart of Koreatown! We are seeking a Head Chef to lead the kitchen of our hip, casual Japanese restaurant. This is an incredible opportunity to bring creativity, leadership, and passion for Japanese cuisine to a concept that is part of a highly successful hospitality group .

What You’ll Do
- Lead and inspire a team of ~15 BOH employees across locations.
- Oversee all kitchen operations, including menu execution, food quality, and cost control.
- Collaborate closely with the General Manager to ensure seamless service and an outstanding guest experience.
- Manage BOH scheduling — while consecutive days off are not guaranteed, you’ll have the flexibility to arrange your schedule as long as the kitchen is running smoothly.
