Job Description
To contribute to the production of the highest possible food quality in the delegated section at all times, and to co-ordinate and be responsible for staff in the delegated section. All production is carried out in line with appropriate food portion control, the departmental business plan, and aqua London guidelines, and service concepts.
Primary Duties
· Maintain a high level of personal hygiene
· Interested and knowledgeable in all pizza-making process
· Work along the Head baker to get always same result of dough for pizza Pala
· Collaborate with colleagues on cutting, slicing and cooking all ingredients needed for all selection of pizza
· Keep a good standard of hygiene in all section including all different pizza oven and machinery
· Tidy storage in both walk in fridges to be maintain at all time with a good rotation of ingredients
· Maintain Luci quality and standards following all par levels avoiding waste of dough and ingredients
· Follow all the assignments received from Head pizzaiolo
· Keeping all ovens always at right temperature to achieve the same quality of pizza
· Check constantly the proof process of the dough, avoiding overproof and then wastages
· Collaborate with FOH staff and kitchen’s chefs to manage a good service and a counter always filled with fresh baked pizza up to Luci standard.
· Prepares all main kitchen dishes; controls the positioning and rotation of foods and ensures proper presentation
· Works with the Chefs in the kitchen to ensure seasoning, portions, and appearance of food
· To carry out any other duties as directed by your senior chef and the exe chef.
· Ensures readiness and makes priorities in case of last-minute changes to reservations
· Maintains an exact record of preparation, cooking and presentation specifications of all dishes produced in the section in a file which is kept at the section at all times for reference
· Confers closely with the Chef de Partie and takes every opportunity to become familiar with all aspects of his or her position, in order to be ready to fill in whenever required
· Co-ordinates job tasks with staff in own section
· To ensure that in the kitchen
- you are set up for service
- your food items have been labelled and dated.
- your mis en place sheets are done at the end of the night
- your food items are covered and re-stocked at the end of the night
- The kitchen is kept clean and tidy at all times

Actively participate in assisting to achieve departmental goals and objectives and carry out assigned work by H.O.Ds and Supervisors.
Actively engage in your own personal development to benefit the business and improve your personal skills – probationary period reviews, annual appraisals, attending training and development courses.
