We are seeking a seasoned Chef de Cuisine with a proven track record of crafting exceptional high-end cuisine and a strong background in MICHELIN, Forbes 5-Star, or AAA 5-Diamond hospitality to help us continue delivering a world-class dining experience.
The Chef de Cuisine is responsible for supporting the Executive Chef in overseeing the daytime culinary operations for the tasting room, Inn breakfast service, amenities, and special events, as well as supporting the Downtown Tasting Room’s culinary program, menu curation, and implementation (or other culinary needs as required). In managing day-to-day kitchen operations, the Chef de Cuisine works directly with kitchen staff to ensure quality, consistency, and efficiency of food production to the Chef’s standards, guided by MICHELIN and Forbes criteria. This role partners closely with the chef team and farmstead to procure products essential for kitchen production.
This full-time position is based at the JUSTIN Estate: 11680 Chimney Rock Road, Paso Robles, CA.
Job Description- Uphold food quality and standards set by the Executive Chef and Executive Sous Chef, maintaining or exceeding MICHELIN and Forbes levels
- Lead menu innovation and recipe creation, introducing current trends, techniques, and flavors while aligning with the restaurant’s brand and Executive Chef's vision
- Oversee daily kitchen operations, ensuring consistency, efficiency, and proper delegation through prep lists, line checks, and lineups
- Partner with the farmstead to plan crops, manage inventory, and adjust menus to minimize waste and maximize product usage
- Maintain kitchen inventory, ordering, and proper storage of items/ingredients
- Maintain cleanliness, sanitation, and safety standards in compliance with all health codes; ensure proper use of equipment with an emphasis on safety and hygiene
- Coach, train, and mentor sous chefs, line cooks, and junior staff; assign tasks and provide clear direction
- Works any kitchen stations as needed to support breakfast, special events, and Downtown Tasting Room operations as needed
- Collaborate closely with the Executive Chef, FOH managers, sous chefs, and farmstead managers to ensure smooth service
- Manage bi-weekly payroll (within budget), annual reviews, hiring, and performance management
- Handle multiple projects with minimal supervision in a fast-paced, high-pressure environment while working effectively with diverse personalities
- Maintain consistent product evaluation through regular tastings and presentation checks
- Continually advance knowledge of current trends, techniques, and flavors to introduce into menu enhancements
- 3+ years of culinary experience required; wine industry or hotel experience is a plus
- 1+ years of fine dining experience in a MICHELIN, Forbes 5-Star, or AAA 5-Diamond setting is required
- Minimum 1 year of supervisory or management experience, including building, training, and mentoring high-performing teams
- Culinary degree preferred
- Genuine passion for culinary operations and pursuit of perfection to create memorable experiences
- Proven track record of working under pressure while maintaining composure, emotional intelligence, and attention to detail
- Availability to work weekends, evenings, and holidays as needed
- Ability to establish direction, secure commitment, and execute effective management processes
- Strong team player with the ability to work independently and adapt to changing priorities

Pay Range: $90,000 - $20,000 and may include a discretionary bonus. Final compensation will be dependent upon skills & experience.

REQUIRED KNOWLEDGE, SKILLS and ABILITIES
- Combined history (minimum 18 months) of professional hospitality/ kitchen experience AND culinary training
- Ability to teach and develop others in a constructive and positive manner
- Organized and systematic approach to work and the aptitude to prioritize efficiently and delegate responsibilities
- Excellent communication, interpersonal, motivational skills to build teams and customer relationships
- True passion for food o Food safety certification. If not currently certified, will commit to completing certification within 6 months.
- Ability to work a flexible schedule including nights, weekends and holidays as required
- Strong technology skills: Microsoft Office
- Consistent and punctual
WORKING CONDITIONS
- Standing and walking for extended periods of time, up to 8-10 hours
- Bending, stooping, twisting, squatting, reaching, climbing; may require use of ladders
- Unassisted heavy lifting and/or assisted lifting to 50 pounds
- Physical dexterity; repetitive hand and arm motion – single grasping, fine manipulation, pushing, pulling
- Exposure to FDA approved cleaning chemicals
- Exposure and work in varying temperatures: <32 degrees F (freezing), 32-40 degrees F (refrigerators), >90 degrees F
- Ability to work in wet and dry conditions
- Ability to use tools and equipment operational machinery

The Chef de Partie role is an ATL level leadership role in Prepared Foods focused on driving culinary excellence and hospitality experience on the Retail Floor. The CDP is a Retail Floor Venue Lead responsible for expediting and executing operational SOPs, merchandising standards, in stock levels, core menu implementations, sales driving initiatives, promotions and Prime Deals for Chefs Case, Fresh Pack, Charcuterie, Rotisserie, Food and Soup Bars and In Line Service Venues (pizza, sandwich etc.).
