Essential Functions and Responsibilities
- Prepares and portions food items according to military guidelines and production logs, ensuring correct serving sizes andcompletion of temperature checks during meal service.
- Maintains working knowledge of HACCP procedures and completes basic production log documentation as required.
- Sets up and restocks food service counters, steam tables, dining room tables, and service stands with hot and cold food, including meats, vegetables, salads, desserts, bread, butter, and beverages.
- Prepares dining areas by cleaning tables and setting up condiments, flatware, napkins, and other service items.
- Prepares fruits and vegetables for cooking and serving, including washing, peeling, cutting, slicing, dicing, and opening canned products. Operates simple food preparation equipment, such as electric potato peelers.
- Monitors portion control, rotates food items to ensure freshness, and conducts temperature checks prior to and during food service line operations.
- Portions food into serving dishes and serves customers cafeteria-style with attention to presentation and uniform portion sizes.
