The Pastry Chef is responsible for managing the pastry kitchen personnel, ensuring the quality preparation of all pastry items and all proper handling/storage of all food items in accordance with standards. Coordinates the purchase of all food and menu development, maintaining food and labor costs.

Opened Fall 2024, Sunny’s is the highly anticipated restaurant and bar from the team behind Miami’s award-winning Jaguar Sun and Sunny’s Someday Steakhouse residency at Lot 6. Located in Littler River, Sunny’s Someday Steakhouse began as Jaguar Sun’s response to the pandemic and quickly became one of Miami’s hottest reservations. The residency scored a coveted “Best Restaurant in America” accolade from Bon Appetit and was named a Tales of the Cocktail “Spirited Award” Regional Honoree. Following two years of construction, the development of a substantial kitchen, and the addition of a roofed dining room, it is preparing to come back in its final form as Sunny’s. In addition to world class food and beverage, Sunny’s will deliver a nightly dinner party that needs to be felt to be believed.

The Sunny’s food menu boasts raw bar selections, wood-fired proteins, and steakhouse classics, alongside hand-made pastas and salads.  On the beverage side, the team has created a substantial wine list spanning the traditional to the more adventurous and obscure. Sunny's will also be pouring classic and house cocktails, in addition to adding two brand new cocktail menus: a pick-your-path martini menu and a zero-proof drinks menu. The design of Sunny’s is a modern interpretation of the white table-clothed steakhouse, with a light-filled 76-seat indoor dining space, private dining room, U-shaped dining bar, and expansive, 3,000 square-foot, Banyan-Tree-canopied patio with outdoor seating.

The  Pastry Chef  leads the pastry department at Sunny’s, creating and executing the dessert menu  as well as managing a small team of pastry cooks.

RESPONSIBILITIES

Include, but not limited to:

  • Oversee daily pastry operations and lead the team in providing memorable experiences for all guests
  • Establish and uphold a team culture that promotes an exceptional working environment
  • Mentor, train, and support the pastry team by providing positive and constructive feedback, role clarity, and growth
  • Consistently evaluate areas of opportunity within the business and supporting a culture of creativity and problem solving
  • Build a foundation for success through developing SOPs, operational guidelines, and ensure that the business is set up for success
  • Engage in all guest feedback, positive and negative, to build a community of regulars and address any issues
  • Oversee scheduling of the pastry team and ensure that labor targets are being proactively managed
  • Uphold meaningful partnerships with vendors
  • Ensure compliance with HR, DOH, DOL, and building safety measures
  • Other duties as assigned       

QUALIFICATIONS

  • 3 years of pastry experience in a high-end kitchen
  • Excellent communication and organizational skill
  • English fluency and additional languages preferred, but not required
  • Ability to stand or walk for long periods of time
  • Ability to balance & carry multiple plates, glass racks and or/glasses, and lift objects up to 40+ lbs.
  • Ability to work nights, weekends and holidays, and variable schedule per the needs of the business

Position Summary

We’re seeking a Head Pastry Chef to join NAB’s senior leadership team. This role is perfect for a seasoned pastry professional with a wide range of expertise—from veinoiseries, bread to plated desserts and large-scale bakery production. The Head Pastry Chef will oversee the pastry program, collaborate with the Head Baker, and work closely with NAB leadership to drive brand development, client engagement, and menu innovation. In addition, this role provides mentorship to the pastry team, fosters a positive kitchen culture, and ensures consistent, high-quality products that reflect NAB’s vision and seasonal approach.

Key Responsibilities:

  • Provide senior leadership within the NAB kitchen, working closely with the General Manager on brand development and client engagement

  • Develop and execute pastry programs across multiple disciplines, including viennoiserie, breads, plated desserts, and bakery production
  • Collaborate with leadership from other Prentice Hospitality Group properties for menu planning, seasonal updates, and event execution
  • Manage multiple dessert menus, ensuring seasonal updates and creative innovation
  • Build and maintain strong relationships with Prentice Hospitality Group’s property leadership for collaboration and consistency
  • Lead and inspire the pastry team by setting clear expectations around product quality, time management, and scheduling
  • Foster a kitchen ethos of respect, responsibility, and collaboration, with a focus on mentorship and skill development
  • Oversee kitchen operations including staff scheduling, timecard management, and equipment upkeep
  • Utilize Restaurant365 (R365) for cost management and reporting
  • Develop and document standardized procedures and recipes to ensure consistency and efficiency across all products

Qualifications:

  • Experience as a Pastry Chef or Head Pastry Chef in a bakery, restaurant, or hospitality setting
  • Expertise across multiple pastry disciplines (veinoiseries, breads, plated desserts, production baking)
  • Strong leadership skills with a track record of team development and mentorship
  • Excellent interpersonal skills with the ability to collaborate across teams and properties
  • Solid understanding of kitchen operations, scheduling, and cost management systems
  • Passion for seasonality, creativity, and client-driven menu development
